Executive chef Nani Kuloloia and chef de cuisine Elvia Villatoro are plating up a four-course meal featuring oyster crudo, local heirloom tomato salad, pan-seared mahi mahi (served alongside roasted ulu, polenta and fried shishito pepper in a chorizo, ginger and saffron broth) and local chocolate mousse.
