This week, Pablo Scruto of Johnson Brothers will discuss the makings of Alipús while Robert Bidigare will mix mezcal cocktails.

Alipús is a small distillery based out of Oaxaca, Mexico and is known for its premium artisanal mezcals, hand-distilled in rural, remote pueblos. Alipús’ distilleries are old-fashioned operations: some still lack stone mills and still crush the roasted agaves by hand in canoas (hollowed out logs) while others distill in potstills made from clay.
